How to Make Cheese Halva (Shal)

Cheese halva is a beloved, repeating recipe that we never tire of sharing, as every home cook on Sho tabkhin today adds her own quiet touch and method for making cheese halva and the curd cheese.

  • 1 cup sugar
  • 1 1/2 cups water
  • 1 tablespoon orange blossom water
  • 1/2 kg sweetened akawi cheese
  • 1 cup fine semolina

  • 4 cups powdered milk
  • 8 cups water
  • or
  • 1 1/2 liters liquid milk
  • 1 cup yogurt
  • 1 can qeemar (clotted cream)
  • How to prepare the cream
  • We boil the water and powdered milk... When the milk starts boiling we add a small cup of white vinegar with a cup of laban rob (strained yogurt) or yogurt...
  • (The yogurt will increase the amount of qarisha... When the qarisha begins to appear we separate it and place it in a strainer and add a can of qeemar cream.)

Method

  1. When the sugar completely dissolves and bubbles appear, add the orange blossom water. Then add the sweetened Akkawi cheese and stir well until the cheese forms a single mass. Gradually add 1 cup of fine semolina while stirring continuously so the semolina absorbs the water and blends completely with the cheese. Stir well for about a quarter of an hour on low heat, continuing to move the dough and lift it up

  3. When you obtain a single mass in the shape of dough, spread it on a clean surface lightly greased with syrup or sugar syrup and a sprinkle of rose water
  4. Cool it slightly and place it in a container, submerge it in syrup, then close the container tightly and refrigerate
  5. When serving, cut it by hand and serve with cream or curd cheese
  6. You can also roll it and fill it as desired
