Red Velvet Cake — a reliable homemade recipe

1/2 cup butter

1 1/2 cups sugar

2 eggs

1 teaspoon vanilla

A pinch of salt

1 tablespoon vinegar

1 cup lukewarm milk

2 tablespoons red food coloring

2 1/2 cups flour + 2 tablespoons cocoa powder

2 tablespoons baking powder

1/2 tablespoon baking soda (sodium bicarbonate)

Frosting:

A sachet of powdered whipping cream mix

1/2 cup cold milk

2 pieces Kiri cheese or any cream cheese

Using an electric mixer, beat the butter with the sugar until smooth, then add the eggs one at a time with the vanilla and salt, continuing to beat.
Add the vinegar, lukewarm milk, and red food coloring and beat.
Stir in the flour, cocoa, baking powder, and baking soda and continue mixing until the batter is completely combined.
Pour the batter into a pan greased with butter and dusted with flour, and bake in a preheated oven at 180°C for 35 minutes or according to your oven.
Turn off the bottom oven element and switch on the top (broil) for 7 to 10 minutes only.
Let the cake cool thoroughly at room temperature and prepare the frosting in the meantime or ahead of time.
Whip the powdered cream mix with cold milk until the cream thickens.
Add the Kiri cheese and continue whipping until fully combined.
Fill the cake with the frosting, chill in the fridge until set, and serve cold or decorate with additional frosting.
