Saffron rice in a delicious homemade style that pairs well with all kinds of meat and vegetable dishes. Saffron is one of the finest and most flavorful additions to food, enhancing both its taste and nutritional value.

Ingredients:

White rice: 1/2 cup basmati rice 1 tablespoon oil 1/4 teaspoon salt, or to taste 1 cup chicken stock from boiling the chicken, or 1 cup water + 1/2 chicken bouillon cube Rice with saffron: 2 1/2 cups basmati rice 1/4 cup oil 1 teaspoon salt, or to taste 1/4 teaspoon black pepper 1/4 teaspoon allspice 1/4 teaspoon seven-spice blend 1/4 teaspoon turmeric 4 cups chicken stock from boiling the chicken, or 4 cups water + 1 1/2 chicken bouillon cubes 1.5 g saffron soaked in 1/4 cup hot water Fried nuts, for garnish

Method:

Wash 3 cups of basmati rice, then soak it in warm water for 20 minutes. After the time has passed, drain the rice and begin cooking it. In a pot over medium heat, add 1 tablespoon of oil, then take only 1/2 cup of the rice and stir it with the oil and salt. When the rice is lightly toasted, add 1 cup of stock and let it come to a boil. Reduce the heat, cover the pot, and cook the white rice over low heat for about 15 minutes, or until cooked through. Meanwhile, soak the saffron in hot water for half an hour before starting the saffron rice. In another pot, add 1/4 cup of oil with the remaining rice (2 1/2 cups), then add the salt and spices and stir briefly before adding the stock. Add the stock, then strain the saffron and add the saffron soaking water over the rice. Let the stock come to a boil. When the liquid level reaches the rice, reduce the heat, cover the pot, and leave the rice for about 30 minutes or slightly less, until cooked. To serve, spoon in the saffron rice first, then add the white rice on top so the colors blend together. Garnish with fried nuts.
