Dough:

1 kg flour

1 teaspoon salt

1 teaspoon sugar

1 cup yogurt

1/2 cup vegetable oil

1 tablespoon yeast

Warm water for kneading

Topping:

Eggplant, thinly sliced and oven-grilled

Green bell pepper, sliced into rings

Small cherry tomatoes

Onion slices

Mozzarella cheese

Tomato paste

Fresh green mint

Black and green olives

Combine all dry dough ingredients and mix.
Gradually add warm water and knead.
Once the dough is soft and pliable, let it rise for about an hour.
After an hour, divide the dough into desired-sized balls, then let them rest for about ten minutes.
Roll out the dough lengthwise and place it in an oiled baking tray.
Spread the tomato paste and vegetables over the dough, pressing lightly so the ingredients adhere to the dough.
Sprinkle cheese on top.
Bake the tray in the oven at 180°C until the focaccia bread is cooked, then grill from above until the cheese is golden.
