Rice halva with qreishah — a very special recipe. Give it a try.

1 cup rice flour

2 cups water

1 cup sugar

500 g sweetened cheese or mozzarella

Mastic (ground) mixed with a little sugar

A splash of rose water

2 liters milk

3 large tablespoons white vinegar

2 tablespoons sugar

1 tablespoon rose water

1 tablespoon orange blossom water

1 tub clotted cream (qimeer)

Combine the water and rice flour and stir until the mixture thickens.
Add the sugar and stir.
When the mixture boils, add the cheese and stir until the cheese melts, then add the ground mastic (mixed with a spoon of sugar) and a dash of rose water and stir.
Remove from the heat and pour the rice halva into a baking dish or into individual serving glasses.
To prepare the qreishah: heat the milk until it boils.
Reduce the heat, add the vinegar and sugar, and wait a few moments until the milk separates, then remove from the heat.
Pour the mixture through a fine sieve and strain well.
Add the clotted cream (qimeer), orange blossom water and rose water and mix.
Let the qreishah cool before using.
When the qreishah has cooled, spread it over the surface of the rice halva.
