Qashtuliyah with kataifi (shredded kunafa) — a creative and very tasty recipe. This version gives the qashtuliyah the beloved flavour of kunafa that everyone loves. Give it a try :)

Ingredients:

300 g kataifi pastry (shredded kunafa) Vegetable oil for frying the kataifi 1/2 cup sugar 1 cup chopped walnuts 1/4 cup ground pistachios For the qashtuliyah: 2 cups milk 6 tablespoons sugar 2 cups liquid cream (heavy cream) 6 tablespoons cornstarch 2 mastic pods, ground with 1/2 teaspoon sugar 2 tablespoons rose water 2 tablespoons orange blossom water

Preparation:

Mix the cream with the milk and sugar and place in a saucepan over medium heat.
Dissolve the cornstarch in 1/4 cup cold water or cold milk.
When the milk and cream mixture begins to boil, add the dissolved cornstarch and stir quickly with a wooden spoon or whisk.
Keep the mixture on the heat, stirring constantly, until it comes to a boil, forms bubbles, and reaches a medium-thick consistency.
Remove the pan from the heat and stir in the ground mastic, rose water and orange blossom water.
Pour the qashtuliyah mixture into a heatproof glass dish or Pyrex and leave it to cool at room temperature. Afterwards you can refrigerate it.
Prepare the topping: heat 1/4 cup vegetable oil in a nonstick skillet and fry the shredded kataifi until golden.
Add the sugar and continue frying until the kataifi threads turn golden and lightly caramelized.
Let the kataifi cool, then spread it evenly over the qashtuliyah.
Sprinkle with chopped walnuts and ground pistachios. Serve the qashtuliyah topped with kataifi threads.
