Baked chicken with kabsa rice — everyone loves this dish.

Chicken thighs

For marinating the chicken:

Yogurt

Vinegar

Chicken spice mix

Garlic powder

Olive oil

Paprika

A little mustard

Kabsa rice (amount as desired)

Kabsa spices

Salt

Chicken broth

Tomatoes

Onion

After washing and draining the chicken thighs, marinate them with the ingredients listed above. Marinate overnight.
Place the chicken in a baking tray and bake on the middle rack until cooked through; you can brown the top if you like.
Prepare the rice: sauté a chopped onion in a little oil.
Add finely chopped fresh tomato once the onion is softened.

When the tomato softens, blend the onion and tomato mixture until it becomes a sauce.
Return the sauce to the pot, add the chicken broth (reserved from cooking the chicken with aromatics), stir, then add kabsa spice and salt. When it boils, add the rice.
Let the broth and rice come to a boil again before reducing the heat.
Cover and simmer on low heat about 20 minutes until the rice is cooked.
Serve the baked chicken with the kabsa rice.
